So, I think I’ve vaguely mentioned to you guys before, i’m vegetarian. I’ve been vegetarian now for close to 10months. I haven’t ate beef or pork in years anyway. I get the craziest looks when I tell people this. I often get, “How do you not eat meat?”, “You don’t eat chicken or turkey?” NOOOO! But I will admit staying away from chicken is STILL hard. I LOVE CHICKEN. However, I feel amazing since i’ve become vegetarian. Well, let me be clear I am actually now a Pescatarian because I have worked fish back into my diet. I am not Vegan. However, the first few months I was primarily vegan; no dairy, etc. That was just tooo difficult to me. I am not a fanatic that tries to push my vegetarian,vegan, pescatarian beliefs off on others. I dont go as far as saying I dont wear any animal. I’m not there just yet, but I will say I feel 1000% better in my energy levels and the weight loss is the best! There is also a lot more variety for people that choose to remove meat from there diets. There’s the Boca brand and MorningStar brand that have everything from vegetarian chik’n nuggets to vegetarian ribs and breakfast sausage. So, I think every couple days I will post vegetarian/vegan/pescatarian recipes that I find if you guys are interested in crossing over (I have a vegan doughnut recipe below!). Vegan Doughnut Recipe (visit www.peta.org for more recipes like this one)

 

Baked Vegan Doughnuts

Dry Ingredients:

1 cup all-purpose flour

1/2 cup sugar

1 1/2 tsp. baking powder

1/4 tsp. salt

1/4 tsp. (scant) nutmeg

1 dash cinnamon

Wet Ingredients:

1/2 cup soy milk

1/2 tsp. apple cider vinegar

1/2 tsp. vanilla extract

Egg replacer for 1 egg (or 2 Tbsp. cinnamon apple sauce)

¼ cup vegan margarine

  • Preheat the oven to 350ºF.
  • In a large bowl, combine the dry ingredients with a whisk to mix thoroughly. Combine the wet ingredients in a small sauce pan over medium-low heat and mix until the margarine is just melted. This mixture should be just slightly warm to the touch.
  • Add the wet mixture to the dry and mix until just combined. It should form a very soft dough.
  • Using a tablespoon, scoop dough into an ungreased nonstick doughnut pan. Smooth out the top of each dough with your fingers―this will make for more even, prettier doughnuts but isn’t crucial.
  • Bake for 12 minutes. They should not be browned on top, but a toothpick will come out clean. Invert the hot pan over a cutting board or cooling rack to release the doughnuts. Allow to cool completely before decorating.
  • Top with a glaze, melted chocolate, and/or sprinkles if desired.
